SLOVENIAN GOULASH
(Alousie Epley) (From Good Times, Good Friends, Good Food)

Ingredients
2 lbs. Beef stew meat, cut into bite-sized cubes
|
1/2 cup oil
|
1 cup onions, chopped
|
1 cup celery, chopped
|
1 clove garlic, minced
|
1 bay leaf
|
Salt & Pepper to taste
|
1 bouillon cube, dissolved in 1 cup water
|
3 carrots, cut into bite-sized pieces
|
3 medium potatoes, cut in to bite-sized pieces
|

Directions:
Brown beef thoroughly in the oil, slowly until very brown, stirring several often. Add onions, celery, garlic, bay leaf, and sauté for a few minutes to soften, while stirring. Stir in water which has the bouillon cube mixed in it. Add potatoes and carrots. Bring to a boil, then reduce heat and simmer slowly until meat and vegetables are tender, about 1 hour. Remove bay leaf. Serve 4 hearty eaters.

VEAL PAPRIKASH
|
Ingredients
1-1/2 lbs. Veal stew meat
|
3 tablespoons shortening
|
1 clove garlic, minced
|
1/2 onion, diced
|
1/2 cup water
|
1-1/2 cups stewed tomatoes
|
1/2 can tomato soup
|
2-1/2 tablespoons flour
|
3/4 cup water
|
4 tablespoons sour cream
|
salt and pepper to taste
|
1/2 teaspoon paprika
|
|
Directions:
In large skillet sauté garlic, onion and veal in the shortening. When meat is brown add 1/2 cup water and cook 10 minutes more. Add tomatoes and soup. In a small bowl, combine flour, 3/4 cup water and stir well; stir in sour cream. Pour flour mixture over the meat, stirring constantly. Add seasoning and simmer 10 minutes more. Serve over noodles.
